What to do when zucchini abounds?

This easy recipe for zucchini salad gives a zip to the plentiful vegetable. Garnish with fresh basil leaves and everyone will enjoy. Serve cold and watch it disappear. If your garden is anything like mine, you will need a lot of creative recipes for zucchini. This satisfying zucchini salad recipe is sure to please all.

  • 1 Medium Zucchini, ends trimmed off
  • 1/2 Lemon (OR use Lemon Essential Oil)
  • 1/2 Tbsp Olive Oil
  • Kosher salt, to taste
  • Fresh Black Pepper, to taste (OR a drop or 2 of Black Pepper Essential Oil!)
  • 2 oz Diced Avocado (1/2 medium haas)
  • 1/3 Cup Frozen peas or fresh
  • 1 Basil Leaf, minced (or basil essential oil)
  • 1 tsp. minced chive


  1. Use a spiralizer or a mandolin fitted with a julienne blade and cut the zucchini into thin spaghetti-like strands. Trim the strands into bite size lengths, about 8 inches long and place it in a large work bowl. Drizzle the olive oil, lemon juice, salt and pepper and toss.
  2. Dice the avocado into small pieces and add to the bowl along with the green peas, basil and chives. Serve right away or chill and enjoy!
