I love to make this Raw Vegan Caesar Salad on a hot Summer night and call it dinner!
I’m not a fan of heavy creamy dressing but I do love lots of flavor and the cheesy garlic taste of this version of Caesar Salad takes it to the top! If you want to add some meat protein I suggest using organic, boneless, skinless chicken breasts. I like to take organic chicken breasts and slice them into thin cutlets (horizontally) for two reasons, one they cook up much faster and two they are more tender. Add your choice seasonings ( I like a combination of garlic powder, parsley, Italian seasoning, cumin, salt & pepper) and toss them in a bowl to coat with some softened coconut oil. Heat up a cast iron pan and lightly brown on each side.
**TIP** I make a bunch of chicken and save it for lunches or dinner thru the week!
- 3 Organic Romaine Lettuce Hearts (chop, wash & spin)
- 1/2 Cup Organic Extra Virgin Olive Oil
- 1 tsp Organic Brown Mustard or Dijon
- 1/4 tsp *Braggs Liquid Amnios (or Coconut Amnios)
- 1/2 Fresh Squeezed Lime or 2 drops Lime Essential Oil
- 1 Clove Garlic -minced
Mix up in a small bowl.
- 1/2 Cup Raw Organic Cashews
- 2 Cloves Garlic
Blend cashews and garlic in a Vita-Mix (high speed blender or food processor) until finely ground up.
Put Romaine Lettuce in a large bowl, pour on dressing & mix thoroughly.
Add in Cheese (cashews & garlic) & toss until Romaine Lettuce is coated.
Serve Immediately, if you are preparing ahead hold off combining ingredients until you are ready to eat. Keep Romaine chilled just before serving!
Serves: 2 good salad eaters or 3 not so good salad eaters 🙂
